The beginning of the 20th century brought an invention by Luigi Bezzera to Italy. He crafted superior gourmet espresso by a method of making coffee with steam pressure. This method allowed for an “espressly” way for making a single cup of coffee. The implication of this word was speed, but the original Italian signified “pressed coffee.”
In spite of this new quick way in making coffee, the steam gave a burnt flavor to the brew. This problem was soon solved in the 1940s by a worker in a coffee grinder factory that manufactured a screw piston which pushed water through the coffee. The design was later improved upon by integrating a spring lever piston. The amount of water used in this key design was less and the extraction level is almost the same as drip coffee, however the process and use of finely ground coffee is quick. The product is an emulsification of coffee oils created under pressure. Rich and flavorful superior gourmet espresso is the outcome.
